Title: Efeito do uso de concentrado proteico de leite (MPC) nas propriedades do queijo Minas Padrão

Resumo: O objetivo deste trabalho foi utilizar a análise de partículas por difração a laser no estudo da cinética de reidratação do MPC70 em pó no leite, visando sua utilização para a fabricação de queijos e o seu impacto nas propriedades do queijo Minas Padrão. Por se tratarem de duas tecnologias distintas que envolvem, tanto a área de secagem, quanto a de tecnologia de queijos, foi fundamental fazer a interface entre estes dois sistemas, já que cada um possui suas particularidades tecnológicas, cujo entendimento se faz necessário para que o reflexo no produto final seja o menor possível. Com o uso do analisador de partículas por difração a laser foi possível identificar em que momento da etapa de adição, ocorreu a total solubilização do MPC no leite. O processo de reidratação do MPC em pó no leite foi identificado em dois tipos de processamentos aplicados, com base na identificação do tamanho das partículas: antes da solubilização, pela presença de partículas na região de maior tamanho ou micrométrica (acima de 10,77 μm) e após a solubilização, pela migração destas partículas para a região de menor tamanho ou nanométrica (abaixo de 0,200 μm). A fabricação do queijo Minas Padrão foi realizada para avaliar o comportamento do MPC reidratado no leite, visando aumentar o rendimento da fabricação, bem como o seu impacto na caracterização físico-química, reológica e sensorial dos queijos produzidos. O estudo demonstrou a clara influência do MPC no aumento de rendimento dos queijos, com apresentação de índices percentuais para o rendimento ajustado (RAJ) acima da porcentagem suplementada; sem diferenças significativas nas características físico-químicas e reológicas dos queijos e boa aceitação sensorial. Assim, este experimento reforça a importância da análise de partículas como ferramenta analítica a ser utilizada na simulação de processos industriais de leite para a fabricação de queijos envolvendo MPCs em pó, podendo a suplementação em queijos com este ingrediente ser uma boa alternativa tecnológica a ser adotada pelas indústrias para melhorar rendimento e produtividade sem alterações significativas no produto final.
Abstract: The objective of this dissertation was to use laser diffraction particle analysis for the study of the rehydration kinetics of powdered MPC70 in milk, aiming its use for cheese production as well as its impact on the properties of the Minas Padrão cheese. Because they are two distinct technologies that involve both the drying area and cheese technology, it was fundamental to interface these two systems, since each one has its technological peculiarities, whose understanding is necessary for the impact on the final product to be as little as possible. With the use of a laser diffraction particle analyzer, it was possible to identify at which moment of the addition step that the the MPC in the milk was completely dissolved. The process of rehydration of powdered MPC in milk was identified in two types of processing, based on the identification of the particle size: before solubilization, through the presence of particles in the region of larger size - or micrometric region - (above 10.77 μm) and after solubilization, through the migration of these particles to the smaller - or nanometric - region (below 0.200 μm). The Minas Padrão cheese production was performed to evaluate the performance of rehydrated MPC in milk aiming yield increase as well as its impact on the physical-chemical, rheological and sensorial characterization of the cheeses produced. The study demonstrated the clear influence of MPC on the increase of cheese yield, with the presentation of percentage indexes for the adjusted yield (Yadj) above the percentage supplemented and without significant differences in the physical-chemical and rheological characteristics of the cheeses, besides good sensory acceptance. Thus, this experiment reinforces the importance of particle analysis as an analytical tool to be used in the simulation of industrial processes of milk for the manufacture of cheese involving powdered MPCs. The supplementation in cheeses with this ingredient may be a good technological alternative to be adopted by production facilities to improve yield and productivity without significant changes in the final product.
